- 1 cup rice
- 1/2 cup cauliflower
- 1 onion
- 1/2 cup carrot
- 1/2 cup peas
- 1/2 cup green beans
- 1 can coconut water
- 1.5 cups water
Preparation
Put the rice and water in a pot, bring to a boil, lower the heat and continue cooking for 10-15 minutes until the water is absorbed, then remove from the heat.

If the green beans are too long, it is recommended to cut them into smaller pieces
Heat a little olive oil (canola oil also works) in a wok or large pan, lightly fry the onion and add the rest of the vegetables.
After a few minutes, when the vegetables have softened slightly, add the coconut water and bring to a boil.
Add the rice and stir-fry for a few minutes until the liquids reduce slightly.
