Cabbage in Tomato Sauce
Ingredients
- 1 medium cabbage, finely chopped
- 1 large onion, chopped
- 2 cups water
- 4 heaping tablespoons tomato paste
- 2 teaspoons salt
- 2 teaspoons cumin
- 2 teaspoons sweet paprika
- 1 teaspoon sugar
- 1/4 teaspoon black pepper
Preparation
Fry the onion until golden.Add the cabbage, mix well with the onion, and cover the pot to steam the cabbage.
Check the cabbage from time to time so it doesn't burn. If you see it's missing water, add just a little boiling water each time, until the cabbage softens.
Mix the water, tomato paste and the rest of the spices, and pour over the cabbage.
Mix well, and leave to continue cooking over low heat with the pot uncovered, allowing the liquids to evaporate.
The cabbage is ready when there is no liquid left in the pot and the cabbage turns red. About an hour of cooking.
You can eat it cold on a slice of bread
or hot with rice or pasta
