Mujadara
Ingredients
- 1 cup green/black lentils, cooked
- 1 cup rice, rinsed and thoroughly drained
- 1 large onion, cut into coarse strips
- 1 and a half cups boiling water
- 1 tablespoon onion soup mix powder
- salt
- 4-5 tablespoons oil
Preparation
Cook the lentils in a pot with plenty of water for about 10 minutes from the moment they boil, then strain. (I make a large batch, divide it into containers and freeze, sometimes more.)Fry the onion well in the pot (preferably non-stick) over low heat until caramelized.
Add the lentils and fry lightly. Add the rice and keep stirring.
Add the spices and the boiling water. Stir. Lower the flame and cook for another 15 minutes without opening the pot.
Turn off the flame and leave covered for another 10 minutes. Open and stir gently.
Perfect alongside a vegetable salad and tahini.
Bon appétit
