Panforte - Italian Cake
Ingredients
- 3 cups chopped dried fruit mix
- 3 cups coarsely chopped mixed nuts
- 2/3 cup whole wheat flour
- 4 teaspoons unsweetened cocoa powder
- 2 teaspoons cinnamon
- 1 teaspoon ground coriander seed
- pinch ground nutmeg
- pinch ground clove
- 1 teaspoon ground ginger
- 150 grams honey
- 200 grams sugar
- 3 tablespoons brandy
Preparation
Mix the dried fruit and nuts together in a bowl.Add the flour, cocoa and spices,
and mix well until all the ingredients are evenly distributed.
In a small pot, heat the honey, sugar and brandy until the sugar is completely dissolved.
Pour the honey and sugar mixture over the dry mixture.
Mix all the ingredients. It's easier to mix in an electric mixer, because at this stage the mixture is very sticky and hard to mix by hand.
Line the pan with baking paper, grease the baking paper, and transfer the mixture to the baking pan. Level the mixture and press it firmly into the pan using wet hands.
Bake at 170 degrees for 40 minutes.
Wait until the cake has cooled completely, and only then remove it from the pan.
This cake keeps for a long time. According to tradition, the Crusaders took it on their long journeys because it does not spoil.
