Fooyka (can be made with meat, poultry, vegetarian or vegan, as you prefer)
Ingredients
- 1 Meat or chicken (can also be without)
- 3-4 Whole onions (peeled)
- 3-4 Carrots, peeled and coarsely chopped
- 3-4 Kohlrabi
- 3-4 Potatoes
- cup Wheat and/or groats
- Sweet potato (peeled and coarsely chopped)
- Zucchini (peeled and coarsely chopped)
- Seasoning :
- 2 tablespoons Chopped ginger
- 4 tablespoons Honey
- quarter cup Soy sauce
- half cup Dry white wine
- quarter teaspoon Black pepper
- 2 teaspoons Ground coriander seeds
- half teaspoon Salt
- liter and a half Water
Preparation
Basically anyone can make it to their own taste: meat, chicken or vegetarian. Decide which vegetables and spices you like. Vegetables you have at home; dark green pepper adds good flavor; whole onions become very soft when cooked and very tasty. Whole garlic cloves. Wheat or groats.Option one:
Put the meat and the hard vegetables such as carrot, kohlrabi and potatoes into the pot, add water (we don't fry anything beforehand), and also the wheat. Cook this for about three hours, then add the spices and the soft vegetables, such as sweet potato and zucchini. If using rice, this is the stage to add it. Continue cooking for another hour, check that everything is soft and ready to eat. If there is excess liquid, leave the pot lid open to let the liquid evaporate. Total cooking time at least four hours, can also be longer but not less.
And the seasoning: two teaspoons of chopped ginger, 4 tablespoons of honey, a quarter cup of soy sauce, half a cup of dry white wine, a quarter teaspoon of black pepper, two teaspoons of ground coriander seeds, one and a half teaspoons of salt. Be careful with the salt, both because of the soy sauce and because of the long cooking and reduction of liquid, the food becomes salty.
And one and a half liters of water on pot number 4. We have made fooyka several times, and after many attempts we arrived at this amount of water, so that on one hand the food doesn't burn and on the other hand it doesn't turn into soup; this really spoils all the flavor when it comes out as soup.
Note: it is recommended to line the pot with cabbage leaves to prevent the food from burning.
Option two: fry the onion, add the chicken (not required), carrot, cauliflower, zucchini, pumpkin, season with salt, pepper, chicken bouillon powder, a little thyme, a little silan, and cover with water and/or a bottle of red wine. Once it boils, it takes an hour and is ready. Always prepare rice on the side. Excellent.
