Date and Nut Roll
Ingredients
- 2 cups Non-roasted nuts of any kind you like (pecans, walnuts, cashews, pistachios, etc.)
- 1 package Pitted dates
- 1/3 cup Sesame seeds, pan-toasted
Preparation
In a food processor, pulse the nuts briefly (only in pulses) - you can also leave them whole. In the microwave, heat the dates for 20 seconds (to make them easier to work with).
Mix the dates with the nut mixture using slightly oiled hands and roll into 2 logs.
On aluminum foil, spread half of the sesame seeds and roll until the entire log is coated in sesame. Do the same with the second log.
Wrap in aluminum foil and place in a bag in the freezer.
Before serving, thaw slightly at room temperature and cut into slices.
Bon appétit
