Bagels (Pretzels) with Caramelized Onion and Pine Nut Filling
Ingredients
- For making For the dough:
- 1 kg flour (preferably sifted - rises better)
- 2 tablespoons Yeast
- 1 cup Starch / yogurt
- 100 grams Butter
- 1 and 3/4 cups Lukewarm water
- 4 tablespoons Sugar
- 1 tablespoon Salt
- **For dipping Before baking:**
- About 3 liters water, Make sure there is enough to fully submerge the pretzels
- 1 tea bag Regular
- 3 tablespoons Date syrup (silan)
- 2 tablespoons Baking soda
- For garnish: coarse salt, Sesame seeds
- **Optional upgrade After baking**
- 50 grams Melted butter
- 1 tablespoon Crushed garlic
- Parmesan / mozzarella Grated
- **For the filling **
- 3 Large onions
- 1.5 teaspoons Sugar
- Half Teaspoon of salt
- A little Oil for frying
- Half Cup of pine nuts
Preparation
1. Preparing the dough:Mix all the dough ingredients using a dough hook / by hand:
Start with the dry ingredients except the salt: flour, yeast, sugar.
Gradually add the remaining ingredients while kneading: butter, water, starch.
Once everything comes together into a dough, add the salt and continue kneading for about 10 minutes.
Lightly grease the sides of the bowl, cover with plastic wrap and then with a towel.
I like to place a garlic head between the plastic wrap and the towel for a quicker and better rise.
If it's cold / you want a faster rise - you can heat the oven to 50 degrees, turn it off, and put the bowl with the dough in to rise. (Without the plastic wrap and towel, so they don't burn.)
While the dough is rising, prepare the filling:
Fry 3 large onions cut into thin strips in a little oil.
When the onion turns translucent,
add 1.5 teaspoons of sugar
half a teaspoon of salt
half a cup of pine nuts, until the onion browns slightly and all the flavors blend.
Fry everything together for about 3 more minutes.
Once the dough has risen, punch it down gently until the air is released.
Divide into balls, I like to weigh each ball at about 50 grams.
Flatten each circle slightly and place a teaspoon of the filling in the center.
Seal into a round shape.
Dip in the water and tea mixture.
Place on a baking tray lined with parchment paper, seam side down.
Place in an oven preheated to 180-200 degrees, depending on the oven.
Bake until nicely golden, about 15 minutes - depending on the oven.
They can be frozen and thawed at room temperature / in a low-heat oven.
Enjoy ;)
