Pickled Peppers
Ingredients
- 10-15 yellow and red peppers
- 1 flat teaspoon salt
- 1 tablespoon crushed garlic
- 3 bay leaves
- 5 berries allspice berries
- 3 tablespoons vinegar
- mineral water to cover the peppers
Preparation
Cut each pepper in half.Clean out the seeds and all the white parts inside the peppers (they make it bitter).
Line a large baking tray with parchment paper.
Arrange the peppers on the tray.
Roast them at 180°C for about half an hour, on the top rack of the oven. It's worth checking every now and then, since every oven behaves differently.
The peppers should get a light char, not turn black.
Take the peppers out and cover them immediately; the steam trapped in the closed container helps the skin come off the pepper more easily.
Once the peppers have cooled, peel them and arrange them in the container.
Sprinkle all the spices over them.
Add mineral water only until it just covers the peppers.
