Ingredients
- 4 large onions, thinly sliced
- 3 tablespoons olive oil
- 3 cloves garlic, chopped
- 1 teaspoon brown sugar
- 1 tablespoon flour (or spelt flour for gluten-free option)
- 1 cup dry white wine (optional)
- 1.5 liters vegetable broth
- 2 sprigs fresh thyme
- 1 leaf bay leaf
- 1 teaspoon salt
- half teaspoon ground black pepper
- sliced sourdough bread and a little olive oil for serving
Preparation
Heat the oil in a deep pot over medium heat. Add the onions and salt and cook for about 10 minutes, until the onions soften.Lower the heat to low, add the brown sugar and cook for about 40 minutes, stirring from time to time, until the onions caramelize to a golden brown color.
Add the garlic and cook for one more minute.
Sprinkle the flour over the onions and mix well for 2 minutes.
Add the wine (if using) and scrape the bottom of the pot. Cook until the liquid has almost completely evaporated.
Add the vegetable broth, thyme, bay leaf and pepper. Bring to a boil, then lower the heat and simmer on low for about 20 minutes.
Remove the thyme and bay leaf and season to taste.
