- 50 grams butter
- half cup balsamic vinegar
- half cup sugar
- teaspoon salt
- half teaspoon white pepper
- 5 medium sweet potatoes
- 5 tablespoons olive oil
- 3 tablespoons soy sauce
- salt
- black pepper
- frozen phyllo dough
- goat cheese, crumbled
- 1 cup milk
- 1 egg
- half cup pine nuts
Preparation
Thaw the dough for 3 hours. To make the onion jam: Bring the chopped onion, balsamic vinegar, butter, sugar, salt and white pepper to a boil in a pot.
Once the mixture boils, lower the heat and cook until it thickens, about an hour, stirring from time to time.

Spread the phyllo dough in one large pan or in individual pans.
Spread the onion jam over the dough.
Scatter slices of goat cheese on top.
Scatter the sweet potato cubes on top.
Sprinkle with pine nuts.
Whisk together milk, egg, salt and black pepper.
Pour over everything.
Bake at 170°C for about 45 minutes, until the dough is golden.
