Pecan Pie
Ingredients
- 350 grams flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 230 grams cold butter
- a quarter cup ice water
- 1 cup maple syrup
- half cup brown sugar
- half cup white sugar
- 2 teaspoons cornflour
- 1 teaspoon vanilla extract
- half teaspoon salt
- 3 eggs
- 50 grams melted butter
- 1+1/2 cups coarsely chopped pecans
Preparation
Cut the cold butter into cubes.Place the flour, salt, sugar and butter in the mixer bowl and mix, gradually adding the ice water and continuing to mix until you get a smooth, even dough.
For the dough to turn out well, all the ingredients need to be very cold.
Refrigerate the dough to rest for about an hour.
Roll out the dough, line a baking pan and return it to the refrigerator for half an hour.
Spread the pecans over the bottom of the dough.
Whisk well the maple syrup, both types of sugar, cornflour, vanilla extract, salt and eggs, and pour over the pecans.
Cover the pan with aluminum foil.
Bake at 180°C for half an hour.
Remove the aluminum foil and continue baking for about 15 minutes until the filling sets.
Gently shake the pan to check the filling; it should look firm.
