Carrot Halva
Ingredients
- 2 cups grated carrot
- 2 cups milk
- 3 tablespoons butter
- a quarter cup sugar
- pinch of cardamom
- 10 units cashew nuts
Preparation
Notes:I only used one cup of milk. You can replace the cup of milk with a cup of coconut milk to get a pareve dessert.
Grate the carrots,
Cut the cashews in half for garnish.
Heat the milk in the microwave for 20 minutes, taking it out and stirring it every 5 minutes.
Place the butter in a pan over low heat,
once the butter has melted, add the carrots.
Cook while stirring constantly for about five minutes until the carrots are lightly browned.
Meanwhile, toast the cashews in a different pan (without adding oil).
Add the hot milk to the carrots.
Continue cooking while stirring constantly until thickened, about seven minutes.
Add the sugar, stir, and continue cooking for about another 4 minutes.
Add the cardamom and stir.
Spread on a plate and sprinkle the cashews over it for garnish.
Or divide into individual portions.
