Quinoa with Sweet Potato
Ingredients
- 1 cup quinoa
- 1 chopped onion
- 3 medium sweet potatoes
- olive oil
- 1 teaspoon salt
- quarter teaspoon black pepper
- 1 tablespoon vegetable bouillon powder
Preparation
In a pot, cook one cup of quinoa with two cups of water, salt and black pepper, and optionally vegetable bouillon powder. It's best to keep the lid closed at the end of cooking so the steam doesn't 'escape' from the pot; this keeps the quinoa moist and not dry.
Grate the sweet potatoes into 'matchsticks'.
Fry the onion in olive oil until browned.
Add the grated sweet potato to the onion, mix well, lower the heat and cover.
Stir from time to time; if needed, add a tablespoon of water if you see the pan lacks liquid.
Steam the sweet potato this way until softened.
Mix the cooked quinoa and the steamed sweet potato together.
