Eggplant Casserole
Ingredients
- 1/2 kg ground beef
- 1 chopped onion
- bunch parsley
- 2 eggplants
- salt, pepper
- 1 tomato, cut in Kurdistani style
- a little olive oil
Preparation
Fry the onion with the meat and season.Peel and slice the eggplants lengthwise, spray with oil spray and sear in a pan to make stripes.
In an English cake pan, arrange the eggplant slices inside, fill with the meat filling and close with the remaining eggplant slices.
Mix the tomatoes with a little olive oil and salt and pour over.
Bake in the oven for about half an hour.
