Chicken in Peanut Butter Sauce
Ingredients
- 1 kg chicken wings/drumsticks
- 2 olive oil
- for the sauce: 1 and a half tablespoons peanut butter (I used peanut butter with small pieces of peanuts inside, but smooth peanut butter also works)
- 1 teaspoon honey
- 3 tablespoons soy sauce
- 4-5 cloves garlic cloves
- 1 tablespoon chili sauce
- half cup water/chicken broth
- 1 green onion for garnish
Preparation
1. Cook the chicken in a pot of water for about 10 minutes from the boil.Remove all the scum from the water.
(The clean chicken broth from cooking the chicken can be frozen and saved for soup instead of bouillon powder.)
2. Strain the chicken from the water and remove the skin.
3. Mix all the sauce ingredients into a uniform paste, not too runny.
4. Arrange the chicken on a tray and brush the chicken well on all sides.
5. Bake at 200 degrees until nicely golden.
(About 30 minutes, depending on the oven.)
From time to time, carefully open the oven to flip the chicken so it browns on all sides.
6. Serve topped with green onion.
