Marshmallow
Ingredients
- 3 tablespoons Gelatin
- one eighth cup Water
- 1 cup Brown sugar
- 1 tablespoon Honey (optional)
- one third cup Water
- 2 Egg whites
- 1 and a half cups Sugar
- 1 and a half cups Cornflour
Preparation
In a bowl, mix the gelatin and the water. The gelatin absorbs the water and forms a lump.
Place the gelatin in a larger bowl with boiling water; the gelatin will turn into a clear liquid. (See pictures below.)
Cook the sugar, honey, and a third cup of water until the temperature reaches 115 degrees.
Whip 2 egg whites in a mixer until a stable, glossy foam forms.
Gradually add the sugar syrup to the egg white foam in the mixer while mixing slowly.
Gradually add the gelatin.
Increase the speed and continue mixing for 10 minutes on high speed.
Add flavors: melted chocolate, any fruit juice concentrate, mint liqueur, 70 grams in total.
Mix the sugar and the cornflour.
Dust a small pan (about 10 cm by 10 cm) with powdered sugar and cornflour using a sieve.
Pour the very sticky mixture into the pan and try to level it,
this step is a bit difficult because everything is sticky.
To level the sticky mixture in the pan, sprinkle a lot of the cornflour and powdered sugar mixture on top, then use your hands to easily smooth the mixture in the pan.
Let the mixture set for 24 hours, uncovered, above the pan.
After 24 hours, cut the marshmallow into cubes.
Coat the marshmallow cubes on all sides with powdered sugar and cornflour.
Enjoy ☺️
