Spanakopita - Greek Spinach Pie
only with feta cheese,
and the pie is shaped like a snail.
The recipe here is my own variation
Ingredients
- 1 package thawed phyllo dough
- 1 package thawed frozen spinach leaves
- 2 eggs
- 1 chopped onion
- 1 package Bulgarian cheese or crumbled feta
- 200 grams grated mozzarella cheese
- 200 grams grated gouda cheese
- 200 grams grated yellow cheese of any kind
- salt
- black pepper
Preparation
Fry the onion until brownedSqueeze the spinach to remove the liquids and add it to the onion
Continue frying until all the liquids have completely evaporated from the pan
Let the onion and spinach mixture cool completely, then transfer to a bowl
Add the eggs and all the cheeses
Add salt and black pepper, be careful with the salt because the mixture contains salty cheese
Brush each sheet of phyllo dough with melted butter, olive oil or cooking spray
Line a baking dish with three sheets of spinach, so that there is a border of phyllo dough overhanging the dish
so that the border can be gathered to wrap the whole pie
Spread a third of the filling, place 2 phyllo sheets on top and repeat the process twice
Finally, gather the dough edges we left at the bottom of the dish and wrap the pie
Place 3 phyllo sheets brushed with some fat on top
Make score cuts so the pie can be easily cut after baking
Bake at 170 degrees for about 40 minutes, until the pie is golden
