Baked Onion and Tomato Salad
Ingredients
- 10 small onions
- 5 tomatoes
- half cup halved black olives
- a third cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon heaping dried thyme
- ground black pepper and salt to taste
Preparation
Cut off both ends of the onions. No need to peel them.Arrange in a baking dish and drizzle with olive oil.
Bake the onions at 170 degrees for about an hour, until they soften.
Peel the onions and chop into large chunks.
Cut the tomatoes - not too finely.
Mix the onions and tomatoes and add the remaining ingredients.
*This salad needs a bit more salt than usual because of the sweetness of the onion.
*The salad tastes better at room temperature.
