Onion Soup
Ingredients
- 8 medium onions, cut into strips
- 3 tablespoons olive oil
- salt and pepper
- 1 heaping tablespoon thyme
- 3 heaping tablespoons flour
- 3 heaping tablespoons onion soup powder
- half cup dry white wine
Preparation
Heat the olive oil in a pot, add the onion strips, salt, black pepper and thyme, stir well and sauté until the onion turns translucent.Add the flour and stir well until all the onion is coated with flour.
Add about ten cups of water, bring to a boil, lower the heat and simmer for about an hour.
Stir the wine with the soup powder, pour into the pot and bring to a boil.
Taste and adjust to your liking.
*This soup needs more salt than usual because of the sweetness of the onion.
## Optional additions ##
Slice challah or a baguette, add a slice of yellow cheese on each slice of bread and bake in the oven until the cheese melts and the bread turns golden.
Make it like tzanim or toast.
Add one such toast slice to each bowl of soup.
You can use it instead of croutons and grated yellow cheese.
**You can replace the olive oil with half a package of butter.
**You can replace the onion soup powder with prepared chicken or vegetable broth.
**I love adding a handful of thin noodles.
